Easy Pea-sy

The star of our spring menu is the English Pea. Sweet and tender, quick to cook, and only here for a short time, fresh peas are the ultimate springtime treat. If you pick some up at the farmer’s market, keep in mind that one pound of pea pods equals about one cup of shelled peas.

Pro Tip: To shell peas, simply pull the stem end of the pod away from the direction it grows and the stringy fiber should open up the pod like a pull tab on an envelope. Run your thumb down the interior to free the peas.
